You Can’t Beat a Beet

Truly one of nature’s super foods, the beet, although not that pretty to look at, has been credited with aiding in lowering cholesterol and blood pressure. Beets are also high in folate, a B vitamin, which is directly related to preventing birth defects during pregnancy.

The pigments in beets that create either the red or gold color are known as betalains, and are directly responsible for aiding in detoxification of the liver, the blood and the intestinal tract. There has even been a link to the consumption of beets and a decreased incidence of colon cancer.

The fact of the matter is that there are so many good things that come from eating beets it is a must to find more ways to incorporate them into the diet.

Here is an easy, delicious, recipe that highlights the natural sweetness of the beet as well as displays their beautiful, deep, jewel-toned colors.

Ingredients:

1 bunch red beets washed, peeled and sliced
1 bunch golden beets washed, peeled and sliced
Extra virgin olive oil
Sea salt
Pepper

Preheat the oven to 375°

Place the sliced beets in a Pyrex baking dish and lightly drizzle with olive oil and then salt and pepper to taste.

Toss the beets to coat with the olive oil.

Place in the oven for 25-30 minutes and roast until slightly tender.

Remove from the oven and serve.
